Tasty Thursday

All right, here are a few more vegetarian recipes.  We've been eating mostly vegetarian during the week, due to all the fresh local veggies that we can easily obtain.  My boys love srirarcha hot sauce, or rooster sauce as we call it in our house.  This fried rice makes a great lunch.

Sriracha Fried Rice

3 TB oil, plus more to fry the eggs
4 cloves garlic, minced
1-2 cups cabbage, thinly sliced
2 TB soy sauce
3 TB sriracha sauce
4 cups cooked, cold rice (make ahead of time and put it in the fridge)
2-4 eggs

Heat 3 tablespoons oil and add the garlic. Sauté for a few seconds and add the cabbage. Sauté until it is crisp-tender.
Add the soy sauce and Sriracha and mix. Add the rice and sauté until the grains are separate and all flavors are well combined. Taste and add salt if you feel the need.
In another pan, heat a teaspoon of oil and crack the eggs carefully and sprinkle a tiny bit of salt. When it is set, flip and let it cook for a minute or so, if you don’t want a runny yolk.
Serve the rice hot with the fried egg on top.

Ryan and I enjoyed this salad for lunch.  We added some feta and had it with toasted pitas.  I'm thinking the boys will like to take this in their lunchbox, especially Hudson since chickpeas are his favorite legume.

Ingredients

    • 1 (19 ounce) cans chickpeas
    • 1 large tomatoes, chopped
    • 3 whole green onions, thinly sliced
    • 2 tablespoons olive oil
    • 1 tablespoon lemon juice
    • 1 teaspoon ground cumin
    • 1/2 teaspoon chili powder
    • 1/4 teaspoon salt

Directions

  1. Rinse and drain chickpeas.
  2. Place them in a bowl.
  3. Add the tomatoes and onions.
  4. Whisk remaining ingredients together.
  5. Toss with chickpea mixture until coated.
  6. Serve right away or refrigerate for up to 2 days.


And another salad dressing recipe.  I've made this one before, but forgot how great it is.  Try it!
Creamy Italian Salad Dressing

Ingredients

    • 2 tablespoons red wine vinegar
    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/2 cup olive oil
    • 1 clove garlic
    • 3 tablespoons sour cream
    • 2 tablespoons grated parmesan cheese

Directions

  1. Place all ingredients in blender and mix on high for about 30 seconds.
