I just made these for dinner tonight. I used veggies from the garden to make the pasta, it was pretty tasty! And for the breadsticks, let me say there are only 2 leftover...
Bruschetta Pasta

Bruschetta Pasta
Ingredients
- 1 lb linguine
- 5-6 large ripe roma tomatoes
- 4 green onions *I didn't have any, so I left these out*
- 2-4 large minced garlic cloves (if you don't like large amounts go with two)
- 12 large basil leaves, thinly sliced
- 2 tablespoons olive oil
- parmesan cheese
- salt and pepper
Directions
- Cook linguine per directions.
- While it is cooking dice the tomatoes and thinly slice the onions.
- Place tomatoes (and their juice), onions, basil, garlic, oil, and salt and pepper (to taste) in a large bowl.
- When noodles are al dente remove from heat, drain and pour the hot noodles onto the other ingredients. Toss together with tongs and then grate in as much fresh parmesan as desired, tossing well to coat all.
- Serve with a little thinly sliced basil and a bit of fresh grated parmesan to garnish.
- To make a meal of it serve with grilled blackened chicken or garlic shrimp.
Dough
- 1 cup warm water (70 to 80)
- 3 tablespoons soft butter
- 1 1/2 teaspoons salt
- 3 cups bread flour
- 2 tablespoons sugar
- 1 teaspoon italian seasoning
- 1 teaspoon garlic powder
- 2 1/4 teaspoons active dry yeast
Topping
- 1 tablespoon melted butter
- 1 tablespoon grated parmesan cheese
Directions
- Place all dough ingredients in your bread machine pan according to manufacturers direction.
- Select dough setting.
- When dough cycle is complete, turn out onto floured board and divide dough in half.
- Cut each portion into 12 pieces and roll each piece into a 4 to 6" rope.
- Place 2" apart onto greased baking sheets.
- Cover and let rise in a warm place for about 20 minutes or until doubled.
- Bake at 350° for 15 minutes or until golden brown.
- Immediately brush with butter and sprinkle with Parmesan cheese.
- Note: Be careful not to overbake or they will become tough.
