Stove Top Macaroni & Cheese
- 1/2 lb elbow macaroni *I used rotini*
- 4 tablespoons butter
- 2 eggs
- 6 ounces evaporated milk
- 1/2 teaspoon hot sauce
- 1 teaspoon kosher salt
- fresh black pepper
- 3/4 teaspoon dry mustard
- 10 ounces sharp cheddar cheese, shredded
- In a large pot of boiling, salted water, cook the pasta to al dente and drain.
- Return pasta to the pot and melt in the butter, toss to coat.
- Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese.
- Over low heat continue to stir until cheese is melted and mixture is creamy.
Easy Skillet Penne & Sausage
1 tablespoon olive oil
3 cloves garlic minced
1 pound Sweet Italian Turkey Sausage Links (remove from the casing)
1/2 cup sun-dried tomatoes, chopped fine
1/2 pound penne pasta
2 cups chicken broth – low-sodium
1 cup milk
1/2 cups grated Parmesan cheese
6 ounces baby spinach
Heat the oil in 12-inch nonstick skillet over medium heat until shimmering. Stir in the garlic and sausage and cook, breaking up the meat with a wooden spoon, until no longer pink, about 4 minutes. Sprinkle the penne evenly over the sausage. Pour the broth and milk over the pasta. Bring to a simmer, then reduce the heat to medium-low and cover. Cook, stirring occasionally, until the pasta is tender, about 10 minutes. Stir in the spinach a handful at a time, and cook until wilted, about 2 minutes. Stir in the Parmesan and sun dried tomatoes. Season with salt and pepper to taste.
