Tasty Tuesday

Here's a couple pasta recipes to share with you. This mac and cheese was creamy, cheesy, and quick! I know, it seems weird to have an egg in it, but try it.

Stove Top Macaroni & Cheese

  1. In a large pot of boiling, salted water, cook the pasta to al dente and drain.
  2. Return pasta to the pot and melt in the butter, toss to coat.
  3. Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese.
  4. Over low heat continue to stir until cheese is melted and mixture is creamy.
We had this for lunch Sunday after church. It was super quick to throw together. I usually have some already cooked Italian sausage in the freezer (for making pizzas quick). I love love love sun-dried tomatoes. I planned on having leftovers, but everyone liked it so much there wasn't any!

Easy Skillet Penne & Sausage

1 tablespoon olive oil
3 cloves garlic minced
1 pound Sweet Italian Turkey Sausage Links (remove from the casing)
1/2 cup sun-dried tomatoes, chopped fine
1/2 pound penne pasta
2 cups chicken broth – low-sodium
1 cup milk
1/2 cups grated Parmesan cheese
6 ounces baby spinach

Heat the oil in 12-inch nonstick skillet over medium heat until shimmering. Stir in the garlic and sausage and cook, breaking up the meat with a wooden spoon, until no longer pink, about 4 minutes. Sprinkle the penne evenly over the sausage. Pour the broth and milk over the pasta. Bring to a simmer, then reduce the heat to medium-low and cover. Cook, stirring occasionally, until the pasta is tender, about 10 minutes. Stir in the spinach a handful at a time, and cook until wilted, about 2 minutes. Stir in the Parmesan and sun dried tomatoes. Season with salt and pepper to taste.
