Pumpkin Chili Mexicana
Ingredients
- 2 tablespoons vegetable oil
- 1/2 cup onion, chopped
- 1 cup red bell pepper, chopped *I use green bell pepper because it's cheaper*
- 1 garlic clove, finely chopped
- 1 lb ground turkey
- 2 (14 1/2 ounce) cans no-salt-added diced tomatoes, undrained
- 1 (15 ounce) can Libby's canned pumpkin
- 1 (15 ounce) can tomato sauce
- 1 (15 1/4 ounce) can kidney beans, drained
- 1 (4 ounce) can diced green chilies *I use a couple jalapenos from the garden*
- 1/2 cup frozen whole kernel corn, loose-pack
- 1 tablespoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon ground black pepper
Directions
- Heat vegetable oil in a large saucepan over medium-high heat. Stirring frequently, add onion, bell pepper, and garlic cooking for approximatley 7 minutes or until tender. Add turkey and cook until browned. Drain.
- To turkey mixture add tomatoes with juice, pumpkin, tomato sauce, beans, chiles, corn, chili powder, cumin, and pepper. Bring this to a boil then reduce heat to low. Cover saucepan and cook for 30 minutes, stirring occasionally.
Spiced Pumpkin Waffles
Ingredients
- 1 1/2 cups all-purpose flour
- 3 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 teaspoon ground ginger
- 1 pinch salt
- 2 eggs
- 1/4 cup firmly packed brown sugar
- 1 cup canned pumpkin puree
- 1 2/3 cups milk
- 4 tablespoons butter, melted and cooled
Directions
- Mix together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt in large bowl.
- In a second bowl, add eggs, sugar, pumpkin, milk, and butter; beat well.
- Gently fold in the flour mixture.
- Cook according to your waffle iron directions.
- I do these in my belgian waffle iron and it uses about 1 cup batter and takes 4-5 minutes to bake.
- They come out a nice deep, golden brown.
- These are great with a little bit of syrup, but would also be great with honey butter.
