The Possum

Guess who paid us a visit during dinner tonight....the possum. Brooks and Hudson were so excited to see it this time. That thing is so ugly. Maybe it heard about the Possum Pie I made for our friends Josh and Susan last weekend. I have no idea why this pie is called Possum Pie, but I had to make it for them since they were in the car when I ran over that possum years ago.

Possum Pie

Ingredients

• 2 (3 ounce) packages cream cheese, softened
• 3/4 cup powdered sugar
• 1 (9 inch) graham cracker crust
• 1/4 cup chopped pecans
• 1/3 cup instant chocolate pudding mix
• 1/4 cup vanilla instant pudding mix
• 1 3/4 cups cold milk
• 3/4 teaspoon vanilla extract
• 1/2 cup whipping cream, whipped
• 12-16 pecan halves

Directions

1. In a mixing bowl, beat cream cheese and sugar until smooth.
2. Spread onto bottom of crust.
3. Sprinkle with chopped pecans.
4. In another mixing bowl; combine pudding mixes.
5. Add milk and vanilla; beat on low speed for 2 minutes.
6. Spoon over the pecans.
7. Refrigerate for at least 4 hours.
8. Top with whipped cream and pecan halves.
