Recipes for the week

Here's a few simple recipes. The boys love baked oatmeal. I love it too. It's a quick, healthy breakfast. I usually double the recipe because they scarf it down and usually have a couple pieces for breakfast.

The beer bread is awesome. If you've had Tastefully Simple's beer bread, this tastes just like it. We recently purchased some beer that we didn't really like, so this was the perfect use for it.

This Italian Salad dressing is easy to make, and you probably have all the ingredients already in your pantry. It is such a simple blend of ingredients and has a great flavor.

Rich and Creamy Baked Oatmeal
  • 1-1/2 cups 2% low-fat milk
  • 2 eggs, lightly beaten
  • 2 tablespoons vegetable oil
  • 1 tablespoon vanilla
  • 2-1/2 cups QUAKER® OATS (quick or old fashioned), uncooked
  • 3/4 cup firmly packed brown sugar
  • 2 teaspoons baking powder
  • 1-1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt (optional)
  • Optional toppings: fruit & skim milk or yogurt
Directions
1. Heat oven to 350. Spray a 1 1/2 qt casserole with cooking spray.
2. Combine the dry ingredients in a large bowl.
3. Mix in the wet ingredients. Let stand for about 15 minutes.
4. Pour into prepared casserole. Bake 35 to 45 minutes until the center is dry and firm to the touch.

Beer Bread

3 cups flour, sifted
3 tsp baking powder
1 tsp salt
1/4 cup sugar
12 oz beer
1/4 cup butter, melted

1. Preheat oven to 375.
2. Mix dry ingredients together and mix in beer.
3. Pour into a greased loaf pan.
4. Pour melted butter on top.
5. Bake for 1 hour.
Notes: Do not scoop your flour into the measuring cup. You must spoon it into the measuring cup or you will have a hard rock that resembles bread.

Italian Salad Dressing

3/4 cup canola oil
1/4 cup apple cider vinegar
2 TB water
1 tsp minced garlic
2 tsp sugar
1 1/2 tsp salt
1/4 tsp pepper
1 tsp Parmesan cheese

1. Mix all ingredients together.
2. Shake before serving.
